Carrot & Apple Muffins

Muffins and cookies are my favourite treats.

It’s just so simple — mix wet and dry ingredients, pour into your preferred tin, bake and there you have them.

All nice and warm, ready for you to sink your teeth into (like the image above).

Grate the apple and carrot small enough that the kids won’t notice.

Lunchbox treats are an option.

Do save some for yourself — especially when that 3 pm craving starts to hit. The added protein of ricotta and cream cheese will hit the spot.

And yes — this is a potential pre-workout energy hit. Why not?
