I don’t mind myself a nice vegan burger.
These creations are not at all time-consuming. I always try to pre-make as much as I can. That makes dinner time meals smooth sailing, less fuss and time spent over a hot stove.
More time to spend doing the things you love — even if that’s watching some trashy TV.

For the paprika mayonnaise:
5 tbsp. mayonnaise
1 tsp. smoked paprika
2 tsp. lemon juice
salt
For the burgers:
1 small sweet potato
1 tsp. olive oil + 2 tbsp. extra for frying
1 clove garlic, minced
1 jalapeño pepper, seeded and minced
1 tsp. ground cumin
¼ tsp. chilli powder
1x 14 oz. (400g) can chickpeas, drained
¼ cup (60g) roasted red pepper, drained, chopped
5 tbsp. panko breadcrumbs
