Warm, soothing oats give you that “feel good” vibe that puts a smile on your face first thing.

I love oats, and there are so many variations I’ve lost count!

So, this is yet another one, and I’m sure you don’t mind.

Coconut & Date Oatmeal

What you need

Three ¼ cups (780ml) water

¼ tsp. salt

2 cups (180g) rolled oats

1 cup (240ml) almond milk, unsweetened

For the toppings:

4 tbsp. desiccated coconut, unsweetened

Eight dates, sliced

4 tbsp. roasted cashews

4 tbsp. honey

What you need to do

  1. Pour the water and salt into a pot, place over high heat, and bring to a boil. Now add the rolled oats, reduce the heat to low and simmer gently, occasionally stirring until creamy, for around 5 minutes. Add in the milk and stir until well combined.
  2. Divide the oats between 4 bowls and top with the coconut, sliced dates, cashews and honey. Serve immediately.
