I wanted to post this a very long time ago.

Cashew cream is a rich, delicate and delicious add on to any meal.

It’s suitable for dessert, breakfast and any savoury alternative.

Drizzle it on your baked potatoes, or why not use it as a dip for your air fried chips?

Put in a bit of garlic, and you have your aioli.

Make a batch of this and store it in the fridge for a week. It will surprise you.

What you need

⅔ cup (100g) of cashew nuts

2 tbsp. almond milk

1 tbsp. tahini

pinch of salt

What you need to do

  1. Place the cashew nuts into a pot of boiling water and cook for 5 minutes to soften. Once soft, drain and place into a food processor with the remaining ingredients. Pulse until smooth, adding more almond milk if needed.
  2. Serve with the Buckwheat Crepes with Sauteed Mushrooms from this recipe pack.
