Think about this one — eggplant roasted with beef marinara, drizzled with cheddar cheese? It’s your calling for a crispy or nice and caramelised cheese topping.

I would top it with some tofu beef or another vegan variety as I don’t eat beef.

Eggplant pretty much goes with anything — and it’s a well known and loved Greek staple.

The Fijian people work with eggplant well, as they prefer to cook it with coconut milk, using layers upon layers of sliced eggplant.

I’m in heaven! When I tried this alternative on a Fijian holiday, I was hooked! Even though I couldn’t replicate the same taste, I was happy with the second-best choice.

You have to try that when in Fiji.
