Muffins are the easiest and tastiest snack around.

You could throw anything in them — whatever ingredients you favour.

I love to add blended oats in mine, with some protein powder and vanilla. Plain flavours allow me to lather on vegan butter or peanut butter, for that matter.

These could easily slot into anyone's lunch box or gym bag.

If you are on leave from work and school right now, try these out and freeze until work starts up again. I highly doubt any of them will be left over for seconds!

Flourless Banana Cashew Muffins

Makes: 10 Prep: 5 mins Cook: 15 mins

What you need

  • 1 cup (250g) cashew butter
  • 2 ripe bananas
  • 2 eggs
  • 2 tbsp. honey
  • ½ tsp. vanilla extract
  • ½ tsp. baking powder
  • ¾ cup (75g) blueberries

What you need to do

  1. Preheat oven to 400F (200C). Grease a muffin tin with some coconut oil.
  2. Combine all ingredients (except blueberries) in a blender or food processor, and blend until smooth. Fold in the blueberries and mix well with a spoon.
  3. Pour the batter into the earlier prepared muffin tin and bake for 15 mins, until golden and set. Cool before serving.
