This looks like a bowl of sunshine created on the Greek Islands.

During my trip to Greece, all I ever ate were salads.

My ultimate indulgence was cucumbers, tomatoes, lettuce, oregano, lemon, olive oil, and some crumbled feta cheese (must be cow milk free!). It was that simple — but I LOVED IT!

Unfortunately, I can’t eat Halumi as my digestion cannot tolerate cow's milk, but the smell of it grilled was always mouthwatering!

So, I thought you might like to share the Greek Island adventure with me by creating this simple and delicious salad for lunch.
