It's more along the lines of lower carb loading - and you are right, the title doesn't really say it as clearly as it should.

I just wanted to highlight that we can add vinegar as well as cooling potatoes to lower their GI. I think far too many people still love potatoes and in this way, they can enjoy them with a twist.

Everyone interprets a message in many ways.
