I do that to ensure I don’t get any gastrointestinal upsets.

These days, I don’t need to do it as much because my gut can now handle larger amounts of lentils and less cooking time.

It’s a method my sister told me to try, that an older greek cook once told her. I took her advice and gave it a go with great success, lol.
