No, carbs aren't essential (and Dr R Dundry talks about this a lot in his material and podcasts), but they are in almost everything we eat (apart from most animal protein).
I do agree that once you start, it's hard to stop. It takes a lot of willpower in the beginning to end this habit.
Most of our food cravings and preferences are due to habits we've conditioned ourselves into. Some are good for us, unfortunately most aren't ideal. The scary thing is that sometimes we aren't even aware of them (or choose to turn a blind eye)
I think mindfulness is a great place to start in order to cut the ties of food obsession.
Being aware of what you are eating, when and why is always the first step.
Most overweight individuals feel the need to eat even though they may not be hungry - or are perhaps under a lot of stress etc.
There is a lot of psychology around it for them, and for lean individuals. It's fascinating to delve deep into this.
