According to this research paper, the nutrient value is lost when you cut the veggies into very small sizes. I assume they mean blending to add to other meals (like meats). That’s one trick we mums use to give our children some disguised vitamins.

Baking and roasting weren’t mentioned in this. But I gather heating them for too long will decrease their nutrient value.
