I’m not sure how much you love sweet potato — but I adore it!

I’m having some for lunch today!

Sweet potato is a delicious carb, and it’s filled with a lot more nutrients and fibre as opposed to your standard white potato.

I eat sweet potatoes with anything, and sometimes I make my mash with salt and olive oil. It’s so delicious.

Next time you bake sweet potato chips, add some cinnamon on top and bake it with high-fat butter or coconut oil. Then, you won’t regret what you did!

What you need

14 oz. (400g) sweet potato

For the hummus sauce:

½ cup (125g) hummus

1 tbsp. nutritional yeast

1 tsp. Lemon juice

¼ tsp. Salt

¼ tsp. onion powder

For the beans:

1x 14 oz. (400g) can black beans, drained

¼ tsp. cumin, ground

1 tsp. Paprika powder

¼ tsp. salt
