Roasted Miso Eggplant
Eggplants are my favourite and yet somewhat deadly ‘once in a blue moon’ foods.
They are from the nightshade family, and sometimes I get a pretty upset stomach from eating them.
But in saying that, they are an excellent and delicious food! I love how the Fijian people roast them in coconut oil, and this Asian inspired dish is another one of my favourites.
The flavour combination of sweet and hot makes my mouth water (and my nose run, too!).
Add this yummy side (or primary) veggie to your meal with some protein. White rice is encouraged!
This meal takes a little longer than the usual recipes I post because eggplant requires a little bit more love. However, the added cooking time helps with digestion — so don’t rush it.
